Mediterranean Orzo Salad
Quick, easy salad to put together for preplanned lunches or perfect as a side dish for your next BBQ.
Ingredients:
1 jar Artichoke Hearts, chopped
1 Cucumber, diced
1/2 tsp Oregano
1/2 cup Parsley
3/4 cup Red Onion
1 cup Kalamata Olives
12 oz dried Orzo Pasta
Black Pepper
Salt
1 jar Roasted Red Peppers
3 tbsp Olive Oil
3 tbsp Red Wine Vinegar
6 oz Feta Cheese
1 cup Cherry Tomatoes
1 cup Fresh Baby Spinach
How to make:
Cook the Orzo pasta as directed on the box.
Mix all of the above ingredients together in a large bowl.
Add in the cooked Orzo pasta and stir together.
If you are looking for an added source of protein you can also top this salad with some grilled chicken as well!
