Mediterranean Orzo Salad

Quick, easy salad to put together for preplanned lunches or perfect as a side dish for your next BBQ.

Ingredients:

  • 1 jar Artichoke Hearts, chopped

  • 1 Cucumber, diced

  • 1/2 tsp Oregano

  • 1/2 cup Parsley

  • 3/4 cup Red Onion

  • 1 cup Kalamata Olives

  • 12 oz dried Orzo Pasta

  • Black Pepper

  • Salt

  • 1 jar Roasted Red Peppers

  • 3 tbsp Olive Oil

  • 3 tbsp Red Wine Vinegar

  • 6 oz Feta Cheese

  • 1 cup Cherry Tomatoes

  • 1 cup Fresh Baby Spinach

How to make:

  • Cook the Orzo pasta as directed on the box.

  • Mix all of the above ingredients together in a large bowl.

  • Add in the cooked Orzo pasta and stir together.

  • If you are looking for an added source of protein you can also top this salad with some grilled chicken as well!
