Loaded Chicken Spinach Tagliatelle

This dish is loaded (hence the name) with tons of veggies! Sometimes its hard getting in all of those veggies throughout the day, but with this meal you’’ll be getting plenty!

Ingredients: (servings ~3-4)

  • 1/2 pound Spinach Tagliatelle (I use Sprouts brand)

  • 4 Chicken Tenderloins or 2 Chicken Breasts cut into bite sized pieces

  • 2 Zucchini diced

  • 2 cups Broccoli

  • 1 Small Red Onion

  • 1 Large Orange Bell Pepper

  • 2 tablespoons Basil Pesto Sauce

How to make:

  • Cook the Tagliatelle according to the package

  • In a large skillet cook the chicken until golden brown. Season with salt, pepper and olive oil.

  • Once the chicken is cooked add in the zucchini, broccoli, red onion, and pepper. Cook for about 3-5 minutes until the veggies are soft.

  • Drain and rinse the pasta after it is finished cooking.

  • Add the pasta into the skillet with the chicken and veggies.

  • Scoop the Pesto Sauce into the skillet and stir until all of the ingredients are covered.

  • Serve and enjoy!
