Crockpot Chicken Tacos

So I had one of my clients bring me his family recipe for Mexican chicken. He was born and raised in Mexico so I knew they were going to be good and I was not wrong, they were amazing. This inspired me to try my own spin on Mexican chicken for taco Tuesday! Here is what I created and it is was darn good as well (clearly I am biased because I am the chef haha but you can decide for yourself).

Ingredients:

  • 2 Boneless, Skinless Chicken Breasts

  • 1/2 can of Chipotle Peppers in Adobo Sauce

  • 1 Jalapeno

  • 1 Medium Red Onion

  • 1/2 cup Chicken Broth

  • Cilantro

  • Salt and Pepper

  • Cumin

  • Garlic Powder

How to make:

  • I put all of the above ingredients into the crock pot and set it to high for about 3 hours. Then, switched it over to low for an additional 2 hours. Just before serving, I shredded the chicken and fell apart like butter. It was hard not to eat all of it as I was doing this. Once it was finished I warmed some corn tortillas on the skillet, added avocado, tomatoes, and salsa for a delicious chicken taco!
