Campfire Frittata

This really can be made anywhere, but the ambiance of a fire in the background and nature surrounding you on every angle just makes this so much better. We went camping up in Georgia recently and needed a quick, easy meal that did not require multiple pans and could be cooked all at the same time. We also wanted something that was filled with a ton of nutrient and was going to fuel us for our long day of hiking with the pups. A frittata is the perfect campsite breakfast. Read below for the recipe.

Ingredients:

  • Eggs - I used 12 eggs in ours because of the size of our group, but you can use less depending on how many mouths you are feeding.

  • 1/2 cup milk

  • Olive Oil - about 1 tbsp is enough to saute the vegetables.

  • Shallot- thinly sliced

  • Cherry Tomatoes- halved

  • Basil- chopped

  • 1/2 cup shredded Parmesan cheese

  • Salt and Pepper to taste

How to Make:

  • First, you will saute the shallots in the olive oil until just about cooked down

  • While the shallots are cooking, whisk together the eggs, milk, cherry tomatoes, parmesan, and basil, salt and pepper in a separate bowl.

  • Pour the egg mixture into the skillet and then cover.

  • Let it cook for about 15 minutes, check it around the 10 minute mark and then cover and let it continue to cook if still very soft and wet.

  • Serve it up and enjoy!!

Just like that you have a delicious campfire breakfast! We used our Coleman Camping Grill to cook on with our cast iron skillet, but you most definitely can cook straight on your campfire or use a dutch oven as well. Happy camping my friends.
