Protein Packed Egg Bake

I love making breakfast as simple as possible. Usually when I wake up I am still sleepy and need some time to just get it together. First, coffee, always coffee. Then, breakfast. During the week I don’t have the time and I don’t feel like cooking, so I like to meal prep something super simple that will last throughout the week for quick and delicious breakfast. This egg bake has been a go-to for quite a while and it is so good! It has tons of veggies, protein, and can be easily transformed into a breakfast sandwich on the go.

Ingredients: (make ~12 servings, depending on how big you cut your squares)

  • 8 Eggs + 4 Egg Whites

  • 2 Bell Peppers (I love red because of the color it adds!)

  • 2 cups Broccoli

  • 1/2 Red Onion

  • 1 package Turkey Bacon

  • Everything But the Bagel Seasoning

How to make:

  • Whisk together the eggs and egg white until all of the yolks are broken.

  • Add in all of the veggies and turkey bacon and stir together.

  • Grease a large baking pan to avoid sticking.

  • Heat the oven to 350 degrees and cook the egg bake for 40 minutes.

  • Make sure to check it before removing from the oven, once it is firm and cooked the way through remove from the oven.

  • Let it cool for about 5-10 minutes and cut into squares.

  • To make this into an easy breakfast sandwich, I typically use sandwich thins, place the egg bake on the bread, add avocado and tomato (sometime a little hot sauce if I am feeling spicy), and wrap in tin foil for on the go!
