Lemon Bread

Cutting out refined sugars has been very important to me recently as I am working towards healing my gut and focusing on helping my body feel its absolute best. Removing artificial and refined sugars will help decrease bloating and inflammation. improve digestion, increase natural energy, and allow your body to process and digest foods more efficiently. This recipe is sweetened naturally with coconut sugar and has a subtle flavor of lemon, making it the perfect breakfast treat or evening dessert. As you begin your journey cutting our refined and added sugars, you may still get cravings. Finding naturally sweet treats and recipes that will help you curb those cravings is going to ease the transition and before you know it, you’ll be feeling great and won’t be wanting those pesky sugars anymore!

Ingredients:

  • 2 cups Almond Flour

  • 1/2 cup Whole Wheat Flour

  • 1/2 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1/2 tsp Salt

  • 1/2 cup Coconut Sugar

  • 1/4 cup Unsweetened Almond Milk

  • 2 tbsp Butter- can substitute for ghee or vegan butter

  • 1/2 cup 0% Greek Yogurt

  • 3 Eggs

  • 1 tsp Vanilla Extract

  • 2 Lemons, juiced

  • Zest of 1 Lemon

How to Make:

  1. Preheat the oven to 350 degrees and line a bread baking pan with parchment paper.

  2. Mix the flours, baking powder, baking soda, salt, and sugar in a mixing bowl.

  3. Add in the almond milk, butter (slightly melted), greek yogurt, eggs, vanilla extract, lemon juice and zest.

  4. Use a hand mixer and mix until everything is smooth.

  5. Pour the mixture into the pan and put in the oven to bake for 35 minutes.
