Turkey Veggie Hash
This is so incredibly easy to make, but soooo dang delicious!
Ingredients:
1 lb Lean Ground Turkey
2 tbsp Peruvian Gold Grilling Sauce (got this from Publix)
Red Potatoes
Broccoli
Mushrooms
Shredded Carrots
Peppers
Yellow Onion
Garlic chopped
Salt and Pepper
Turmeric
Oregano
Thyme
How to make:
Chop and of the potatoes and veggies. I did not add specific amounts to this recipe because it can vary based on your liking and/or how many people you are cooking for. I roughly made about 4-5 servings of potatoes and veggies.
Place the potatoes in the skillet with a little bit of olive oil, salt, and pepper to get them cooking. You want the potatoes to start softening before adding any of the veggies.
Next, add the broccoli, carrots, onion, peppers, and garlic to the skillet with the potatoes.
In a separate pan cook the ground turkey in about 2 tbsp of Peruvian Gold Grilling Sauce. Cook until golden brown.
After the potatoes and veggie mix seems to be just about softened, add in the mushrooms last.
While the mushrooms cook, add a good sprinkle of oregano and thyme.
Then add a small sprinkle of turmeric and mix the veggie and potatoes thoroughly.
To plate: first serve yourself veggies/potatoes, then add on the turkey. To garnish sprinkle some parmesan cheese and fresh parsley.
