Shrimp Buddha Bowls

This is the perfect light dinner, packed with tons of nutritious ingredients and taste delicious!

Ingredients:

  • Kale

  • 1/2 Red Onion; cut into slices

  • 1 Sweet Potato; cubed

  • 1 can Chickpeas; drained and rinsed

  • 1 pound Shrimp

  • Cilantro Avocado Dressing

  • 1 tsp Paprika

  • 1 tsp Cumin

  • 1 tsp curry Powder

  • 1 tsp Garam Masala

  • 1 Lemon; juiced

How to make:

  • Season the sweet potatoes, red onion, and chickpeas with olive oil, paprika, cumin, and curry powder.

  • Roast in the oven at 350 degrees for about 15-20 minutes or using an air fryer at 380 degrees for 20 minutes. Make sure the shake them around at the halfway point.

  • While those cook, prep and cook the shrimp.

  • Marinate the shrimp in the juice of the lemon with salt and pepper.

  • Cook all the way through and then remove all of the tails.

  • Next, put about 1 cup of kale in each bowl and massage the kale with olive oil and salt.

  • Build your bowl: add on the sweet potatoes, onions, and chickpeas. Next, add the shrimp. finally top with the dressing and eat away!!!
