Shrimp Buddha Bowls
This is the perfect light dinner, packed with tons of nutritious ingredients and taste delicious!
Ingredients:
Kale
1/2 Red Onion; cut into slices
1 Sweet Potato; cubed
1 can Chickpeas; drained and rinsed
1 pound Shrimp
Cilantro Avocado Dressing
1 tsp Paprika
1 tsp Cumin
1 tsp curry Powder
1 tsp Garam Masala
1 Lemon; juiced
How to make:
Season the sweet potatoes, red onion, and chickpeas with olive oil, paprika, cumin, and curry powder.
Roast in the oven at 350 degrees for about 15-20 minutes or using an air fryer at 380 degrees for 20 minutes. Make sure the shake them around at the halfway point.
While those cook, prep and cook the shrimp.
Marinate the shrimp in the juice of the lemon with salt and pepper.
Cook all the way through and then remove all of the tails.
Next, put about 1 cup of kale in each bowl and massage the kale with olive oil and salt.
Build your bowl: add on the sweet potatoes, onions, and chickpeas. Next, add the shrimp. finally top with the dressing and eat away!!!
