Asian Style Noodles and Meatballs
So instead of the classic spaghetti and meatballs I decided to take a spin on that and make Asian style stir fry with meatballs. It was even better than I expected! So simple, yet packed with all of the yummy goodness of a stir fry.
Ingredients for meatballs:
1 lb lean ground turkey
3 cloves garlic
1/2 tbsp fresh chopped ginger
1/4 cup low sodium soy sauce
1 tbsp sesame oil
1 cup panko bread crumbs
1/2 cup of fresh chopped basil
Ingredients for noodle stir fry:
1 package Pad Thai Noodles
1 red bell pepper
1 orange bell pepper
1 package shredded carrots
1 small red onion
1/4 cup Island Soyaki Sauce from Trader Joe’s
How to make meatballs:
Preheat the oven to 375 degrees
Mix all of the ingredients together in a large bowl, make sure to blend it well so that each meatball gets an even amount of all of the ingredients
Once the ingredients are evenly mixed, lay parchment paper on a large baking sheet and spread sesame oil across so they do not stick.
I like to just rub the sesame oil across the pan with my hands and then use the oil on my hands to roll the meatballs into about 1 inch circles.
It doesn’t really matter how big you make them, just try to make them all about the same size so that they cook evenly.
Once you have all of the meatballs spread out on the baking sheet, put in the oven and bake for 20 minutes. After 20 minutes switch the oven to a high broil and cook for another 2 minutes to crisp up the meatballs.
How to make noodle stir fry:
Cook pad thai noodles according to the directions on the package.
While those are cooking add the red and orange bell peppers, red onion, carrots to a skillet.
Cook until the peppers begin to soften.
Add in the Island Soyaki Sauce and simmer for about 5 minutes.
Once the noodles are finished rinse them and add them to the skillet with the veggies.
Cook for an additional 5 minutes to allow the noodles to soak up the sauce.
Put the desired amount into a serving bowl and top with your Asian meatballs.
